I have another vegetable recipe for you today. This one, is something you can make in advance and is great to take places because it is supposed to be chilled. If you ever need a great veggie side dish - this is it!
2 lbs green beans
6 garlic cloves, minced
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon pepper
1. Blanch green beans in a boiling water for 5 minutes or until bright green in color. Drain and place in a bowl of ice water so the beans stop cooking.
2. Mix together all garlic, olive oil, vinegar, salt and pepper.
3. Toss in the green beans and refrigerate.
4. Enjoy these green beans when you are ready or take this healthy side dish to your next get together!
