Roasted Cauliflower

I love vegetables, but sometimes I get bored with them.  I am always looking for new ways to create a delicious tasting veggie!  It sure is easier to eat healthy when you enjoy the taste of what you are eating.  I have made some mistakes in the kitchen before...I think the flavors all sound good together and then when I actually eat it, it's not yummy at all!  Have you ever done that?  I recently tried incorporating cilantro with broccoli.  Okay, I guess now that I'm typing it, it doesn't really sound that great together.  I love cilantro so much and wanted a new broccoli recipe.  So, naturally, I decided to put them together.  I added other spices and created a new broccoli recipe.  Only, it was horrible.  Oops!  I went ahead and tossed that recipe in the trash.  Now, let's get back to point, I have a wonderful cauliflower recipe to share!  I decided to take a break from broccoli recipes.  For my cauliflower recipe, you have to love garlic.  I would say that 90% of the things I cook in my kitchen include garlic somehow.  I definitely recommend buying fresh garlic too.Not only does it taste better than the garlic in a jar, it has no preservatives.  Finally, after all that, here's my cauliflower recipe.  It's a great side dish to any meal!

Ingredients

1 head of cauliflower, washed and chopped

2 fresh garlic cloves, minced

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes

2 tablespoons olive oil

 

Directions

1. Preheat oven to 425 degrees.

2. Combine all ingredients into a bowl and mix together to coat the cauliflower evenly. 

3. Place the cauliflower onto a greased baking sheet.  Spread it all out so they aren't overlapping.

4. Put in the over for 20-25 minutes until golden and tender.

5. Serve and enjoy!
